Özet
İstanbul yüzyıllardır birçok büyük devletin başkentliğini yapmış büyük bir merkezdir. Özellikle Osmanlı Devleti'nin Konstantinopolis'i fethetmesiyle beraber büyük bir tüketim merkezi haline gelmiştir. Tüketilen ürünlerin arasında temel ihtiyaç olan gıda, konumuz için temel teşkil etmiştir. Bu şehirde yaşayan halk olduğu gibi, otoriteye mensup olan birçok kişi de vardı. Buna bağlı olarak birçok ürün getiriliyor ve buna uygun koşullarda denetleniyordu. Bu çalışmada tüketim merkezi olan İstanbul'a getirilen gıda ürünlerinin niteliği, niceliği ve bu ürünlerin nasıl tüketildiği incelenmiştir. İaşe ürünleri temin edilirken hangi bölgeler tercih edilmiş, getirilen bu ürünler İstanbul'da nasıl tüketilmiş ve bu ürünler getirilirken nasıl bir denetleme sistemi içerisinde varlığını sürdürmüştür. Denetleme sistemleri kullanılırken nasıl bir yol izlendiği de incelenen konular arasındadır.
Istanbul is a great center that has been the capital of many great states for centuries. Especially with the conquest of Constantinople by the Ottoman Empire, it became a major consumption center. Among all the consumed products, the food which is our basic need is our main topic. There were many people who worked for the authority, as well as the people living in this city. The residents of the state were given the most exceptional food products from various regions of Anatolia. These products had to meet both basic needs and show the magnificence of the state. Accordingly, many products were brought and inspected under appropriate conditions. In this study, the quality and quantity of food products brought to Istanbul, and how these products were consumed are examined. In this study, there is information about the regions where food products were supplied, the consumption of these products in Istanbul and the inspection system of these products. What kind of a path is followed when using inspection systems is also analyzed.
